Le pizzole
If one dish tells the story of Anguillara Sabazia better than any other, it's the pizzole: small fried pizzas, golden and fragrant, served sweet or savoury. A simple, country flavour born in the village homes and grown into something of an institution — so much so that it has a food festival all its own.
Sweet or savoury
How to enjoy them
The savoury version pairs with local cured meats and cheeses, perfect as street food to enjoy strolling through the lanes. The sweet one, dusted with sugar, is the indulgent close to an evening. They're eaten hot, straight from the fryer, perhaps with a view over Lake Bracciano: a little ritual to share as a couple.
The pizzole festival
In August, in the square
Every summer the village dedicates a sagra — a food festival — to the pizzole: lively squares, music and the scent of fried pizza drifting through the old town. It's the best chance to taste them at their most authentic, though you'll find them in the local trattorias and bakeries all year round.
